Ingredients
  

Main Ingredients

  • 1 tablespoon olive oil For cooking chicken
  • 2 pieces boneless, skinless chicken breasts Pat dry before cooking for better browning
  • ½ teaspoon sea salt For seasoning

Sauce Ingredients

  • ¼ cup strawberry jam Can substitute with fresh strawberries if desired
  • 1 tablespoon good quality balsamic vinegar Use good quality for the best flavor
  • 1 tablespoon water Extra if mixture is too thick

Finishing Touches

  • ¼ cup fresh basil leaves Cut into ribbons or finely chopped; save some for garnish
  • 2 tablespoons crumbled goat cheese Optional; can substitute with feta or leave out for dairy-free option
  • ¼ cup fresh strawberries Sliced; optional for garnish

Instructions
 

Cooking the Chicken

  • Heat olive oil in a medium skillet over medium-high heat.
  • Season chicken breasts with a sprinkle of salt on both sides and place in pan.
  • Cook for about 4-5 minutes on one side or until a nice golden crust forms.
  • Flip and cook for another 4-5 minutes or until the chicken is fully cooked through.

Making the Sauce

  • Whisk together strawberry jam, balsamic vinegar, and water in a small bowl.
  • When chicken is just about finished cooking, pour mixture over the top, nestling the chicken breasts into the sauce and scraping up brown bits on the bottom of the pan.
  • Reduce heat and bring sauce to a simmer, letting it bubble for 2-3 more minutes or until it has reduced and thickened a bit.
  • Stir in most of the basil, and simmer for 1 minute.

Serving

  • Remove chicken breasts from pan, pour sauce over the top of each piece.
  • Sprinkle with goat cheese if desired and garnish with remaining basil and sliced strawberries.

Notes

Serve the chicken hot with strawberry sauce. Great with rice, mashed potatoes, or a simple green salad. Store in an airtight container in the fridge for up to 3 days. Reheat gently. If the sauce thickens in the fridge, stir in a little water when reheating.
