Preparation

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the cottage cheese and olive oil. Mix well until smooth.
  • Add the egg (or flaxseed mixture) into the bowl and stir until combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients. Stir until just combined.
  • Gently fold in the chopped spinach and mozzarella cheese until evenly distributed.
  • Scoop the dough onto the prepared baking sheet, forming bagel shapes. Leave space between each flagel.

Baking

  • Bake in the preheated oven for 20-25 minutes or until golden brown.
  • Let them cool slightly before serving warm.

Notes

Serve warm or at room temperature with spreads like cream cheese, hummus, or avocado. They can also be sliced and filled with sandwich fixings.
