  • 8 pieces corn tortillas
  • 1 pound breakfast sausage
  • 6 pieces eggs
  • 1 cup shredded cheese cheddar or your choice
  • 2 cups sausage gravy
  • 1/2 cup diced green onions optional
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the breakfast sausage over medium heat until browned.
  • Whisk the eggs and scramble them with the cooked sausage. Season with salt and pepper.
  • Take a tortilla, fill it with the sausage and egg mixture, and sprinkle some cheese inside. Roll it up and place in a greased baking dish.
  • Repeat for all tortillas.

Baking

  • Pour the sausage gravy over the top of the rolled enchiladas.
  • Sprinkle additional cheese and green onions on top.
  • Bake for about 20-25 minutes or until heated through and cheese is bubbly.

Serving

  • Serve these enchiladas hot straight from the oven. They can be garnished with extra green onions or a sprinkle of cheese on top.
  • Consider serving them with additional sausage gravy on the side for dipping or drizzling.

Notes

Make sure to grease your baking dish well to prevent sticking. For added flavor, you can use different types of cheese or add spices to the egg mixture.
