Preparation

  • In a skillet, heat olive oil over medium heat.
  • Season chicken breasts with salt and pepper, then cook in the skillet until golden and cooked through.
  • Remove chicken and set aside.
  • In the same skillet, add chopped onion and garlic, sautéing until translucent.

Cooking

  • Stir in rice and chicken broth; bring to a boil.
  • Reduce heat, cover, and simmer for about 15-20 minutes or until rice is tender.
  • Once rice is cooked, place the chicken back into the skillet and smother with gravy.

Notes
