  • 8 oz pasta (spaghetti, penne, fusilli or choice) Whole grain or gluten-free options available.
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil For sautéing
  • 2 cloves garlic, minced Fresh or minced garlic
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1/2 cup heavy cream or coconut milk
  • 1/4 cup grated Parmesan cheese or nutritional yeast For vegan option
  • 1 each lemon, juiced For brightness and acidity
  • 1/4 cup pine nuts, toasted

Instructions
 

Preparation

  • Cook the pasta according to package instructions until al dente, saving 1 cup of pasta water before draining.
  • In a skillet, heat olive oil over medium heat and sauté the garlic until fragrant.
  • Add bell peppers and broccoli, cook for 3-4 minutes until tender.
  • Mix in spinach and cherry tomatoes, cooking until spinach is wilted.
  • Stir in cream and Parmesan cheese, then add the cooked pasta and reserved pasta water, stirring to combine.
  • Season with salt, pepper, and lemon juice to taste.
  • Sprinkle with pine nuts before serving.

Notes

Prep ahead by chopping vegetables and storing them in the fridge. Experiment with different vegetables and sauces to keep meals interesting.
