  • 4 pieces boneless, skinless chicken breasts Substitute with chicken thighs if desired.
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

For the Sauce

  • 1 cup balsamic vinegar Can substitute with low-sodium soy sauce.
  • 2 cloves garlic, minced Fresh garlic is recommended for best flavor.

To Serve

  • 1 cup cherry tomatoes, halved If unavailable, diced regular tomatoes can be used.
  • 1 cup mozzarella cheese, shredded Consider using part-skim mozzarella for a healthier option.
  • Fresh basil leaves, for garnish Use fresh for the best flavor.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large oven-safe skillet, heat the olive oil over medium heat.
  • Season the chicken breasts with salt and pepper, then add them to the skillet.
  • Sear the chicken until golden brown on both sides, about 5-7 minutes each side.
  • In a bowl, mix the balsamic vinegar and minced garlic.

Cooking

  • Pour the balsamic mixture over the chicken in the skillet.
  • Sprinkle the halved cherry tomatoes on top of the chicken.
  • Transfer the skillet to the oven and bake for 20 minutes.
  • Remove the skillet from the oven, sprinkle the mozzarella cheese on top, and return to the oven for another 5-10 minutes until the cheese is melted.
  • Garnish with fresh basil leaves and serve hot.

Notes

For best results, let the chicken rest for a few minutes after baking to maintain juiciness.
