Ingredients
  

For the Base

  • 2 pieces chicken breasts Can substitute with chicken thighs or tofu.
  • 1 cup rice or quinoa Quinoa can be replaced with brown rice or cauliflower rice.
  • 2 cups mixed vegetables Use any seasonal vegetables like bell peppers, broccoli, or zucchini.

For the Sauce

  • 1/4 cup hot honey Can substitute with regular honey mixed with cayenne or hot sauce.
  • 2 tablespoons olive oil Avocado oil can be used for a higher smoke point.
  • to taste Salt
  • to taste Pepper

To Serve

  • green onions Optional garnish.
  • sesame seeds Optional garnish.

Instructions
 

Preparation

  • Prepare your rice or quinoa according to package instructions. This will serve as the base for your bowls.
  • In a skillet, heat the olive oil over medium heat until shimmering.
  • Season the chicken breasts with salt and pepper, adding them to the skillet. Cook until golden brown and completely cooked through, around 6-7 minutes per side.
  • During the last few minutes of cooking, drizzle the hot honey over the chicken, turning them to coat well in the sauce.
  • Once cooked, remove chicken from the skillet, let it rest for a few minutes, and slice it into bite-sized pieces.
  • In the same skillet, add the mixed vegetables, sautéing them until tender and vibrant.
  • To serve, place a scoop of rice or quinoa in bowls, followed by the sautéed vegetables and sliced chicken on top.
  • Drizzle with additional hot honey if desired, and garnish with green onions or sesame seeds.

Notes

These bowls are excellent for meal prepping. Store in an airtight container for up to 4 days in the refrigerator. Reheat in the microwave or stovetop until warmed through, adding a splash of water to maintain moisture.
