  • 3 tablespoons honey
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil

Preparation

  • Cook the rice according to package instructions until fluffy.
  • Mix honey, soy sauce, and minced garlic in a bowl until well combined.
  • Heat vegetable oil in a pan over medium heat. Season chicken breasts with salt and pepper, then add to the pan.

Cooking

  • Sear the chicken for about 6-7 minutes on each side, or until golden brown and cooked through.
  • Pour the honey garlic mixture over the chicken and let it simmer for a few minutes.
  • In a separate pan, sauté the mixed vegetables until tender, about 5-7 minutes.

Assembly

  • Serve the glazed chicken over the cooked rice and top with sautéed vegetables.
  • Garnish with chopped green onions and enjoy.

Notes

Make-ahead tips: You can prep the rice and glaze ahead of time. Store leftovers for up to four days. Reheat chicken and rice with a splash of water to retain moisture.
