Ingredients

  • 4 medium Sweet potatoes Any orange-fleshed sweet potato works.
  • 2 tablespoons Olive oil Can substitute with avocado oil.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

For the Protein

  • 1.5 pounds Chicken breast Can substitute with turkey breast or rotisserie chicken.
  • 1 cup BBQ sauce Choose low-sugar or reduced-sodium if desired.

To Serve

  • 1 cup Fresh toppings (e.g., avocado, cilantro, green onions) Can swap toppings for others like parsley or chives.

Preparation

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment or lightly oil it.
  • Peel and cube the sweet potatoes. Toss them in olive oil, salt, and pepper until well coated.

Roasting Sweet Potatoes

  • Spread the sweet potato cubes in a single layer on the baking sheet. Roast for about 25–30 minutes until tender and lightly browned.

Cooking Chicken

  • While the sweet potatoes are roasting, grill or bake the chicken breast until cooked through. Let it rest a few minutes, then shred or chop it and mix it with BBQ sauce.

Assembly

  • In a bowl, layer the roasted sweet potatoes, BBQ chicken, and top with fresh toppings such as sliced avocado, chopped cilantro, and sliced green onions.

Serving

  • Serve the bowls warm and enjoy!

Notes

For best texture, serve fresh toppings just before eating and avoid overcrowding the baking sheet when roasting sweet potatoes.
