Ingredients

  • 1 pound chicken breasts, diced Cut into small, even pieces for consistent cooking.
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup diced tomatoes
  • 1 cup heavy cream Can substitute with half-and-half or low-fat milk for a lighter option.
  • 2 cups chicken broth
  • 8 ounces pasta (penne or rotini) Any pasta shape can be used.
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste Taste the sauce before serving to adjust seasoning if needed.
  • Chopped parsley for garnish For a pop of color when serving.

Preparation

  • In a slow cooker, combine diced chicken, bell peppers, onions, tomatoes, chicken broth, and Cajun seasoning.

Cooking

  • Cook on low for 4-6 hours or until chicken is cooked through.
  • About 30 minutes before serving, add the pasta and heavy cream to the slow cooker, stirring to combine.
  • Cook until the pasta is cooked according to package instructions.

Serving

  • Serve hot, garnished with parsley and enjoy with a side salad and garlic bread.

Notes

If you have leftovers, let the pasta cool down to room temperature. Transfer to an airtight container and store in the refrigerator for up to 3 days. Reheat with a splash of chicken broth to loosen.
