For the Base

  • 2 fillets salmon fillets Choose high-quality salmon for the best flavor.
  • 8 ounces pasta (fettuccine or linguine) Any pasta type can be used.
  • 2 cups fresh spinach Can be substituted with kale or other vegetables.

For the Sauce

  • 1 cup heavy cream Can be swapped with half-and-half or plant-based cream for lighter version.
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced) Avoid browning the garlic to prevent bitterness.
  • Salt and pepper To taste.

To Serve

  • Parmesan cheese For serving.

Preparation

  • Cook the pasta according to package instructions until al dente, then drain it.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  • Season the salmon fillets with salt and pepper. Place them in the skillet and cook for about 4-5 minutes per side or until cooked through. Remove the salmon from the skillet and set aside.
  • In the same skillet, pour in the heavy cream and bring it to a simmer. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  • Flake the cooked salmon into bite-sized pieces and add it back to the skillet along with the cooked pasta. Toss everything gently to combine and heat through.
  • Serve immediately, topped with grated Parmesan cheese.
