10 Minute Air Fryer Chicken Sausage and Veggies

Ingredients
  

Vegetables

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 large red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces

Flavorings

  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1 pinch black pepper

Protein

  • 1 package chicken sausage (12 oz), robust Italian flavor recommended

Instructions
 

Preparation

  • Chop the veggies and add them to a large bowl. Drizzle them with avocado oil and toss to coat.
  • In a smaller bowl, mix the spices together with the salt and pepper. Add this spice blend to the veggies and toss to coat everything well.
  • Slice the sausage into 3/4 inch rounds and add it to the bowl with the veggies. Toss everything together.

Cooking

  • Preheat the air fryer to 390 degrees F (if needed) and spray the air fryer basket with cooking spray.
  • Add the veggies and sausage to the air fryer basket in an even layer. Cook for 10 minutes, flipping everything halfway through. You might need to do this in batches depending on your air fryer size.
  • Once cooked, remove the sausage and veggies from the air fryer.

Notes

Make sure to cut the veggies into uniform sizes for even cooking. Feel free to swap out the vegetables based on what you have on hand. Broccoli, carrots, or asparagus can also work well. For a little heat, you can add red pepper flakes to the spice mix.
