For the Sauce

For the Topping

  • 2 cups shredded mozzarella cheese Melts into a gooey topping.

Instructions
 

Preparation

  • Start by salting the shredded zucchini to remove excess moisture. Let it sit for about 15-20 minutes, then drain it well.
  • In a large bowl, combine the drained zucchini, salt, eggs, and Parmesan cheese until evenly mixed. This will form your crust.

Cooking the Filling

  • In a skillet over medium heat, brown the ground beef with chopped onions, green bell pepper, and mushrooms until the meat is fully cooked. Drain excess fat.
  • Add pizza sauce, oregano, garlic powder, and black pepper to the skillet. Stir everything together and let it simmer for 5 minutes.

Assembly

  • Preheat your oven to 375°F (190°C). Spread the zucchini mixture evenly in the bottom of a greased baking dish.
  • Pour the meat and sauce mixture on top, spreading it evenly.

Baking

  • Sprinkle mozzarella cheese followed by cheddar cheese over the casserole.
  • Place the assembled casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and golden brown on top.

Notes

For extra flavor, sprinkle fresh basil on top before serving. Serve with marinara for dipping. Consider adding red pepper flakes for some heat.
