Ingredients
  

For the Fritters

  • 2 cups grated zucchini If short on zucchini, yellow squash can be used.
  • 1/2 cup grated Parmesan cheese Use part-skim cheese for a healthier option.
  • 1/2 cup shredded Mozzarella cheese Consider using nutritional yeast for a dairy-free version.
  • 1/4 cup flour Whole wheat or almond flour can be substituted for gluten-free.
  • 1 large egg A flax egg can be used as a vegan alternative.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • as needed Oil for frying Use for frying in a skillet.

Preparation

  • Grate the zucchini using a box grater, then place it in a clean kitchen towel and squeeze out excess moisture.
  • In a large bowl, combine the grated zucchini, Parmesan cheese, Mozzarella cheese, flour, egg, garlic powder, salt, and pepper. Stir until the mixture is well combined.
  • Heat about 1/4 inch of oil in a large skillet over medium heat. Test if the oil is hot enough by dropping in a tiny bit of the mixture; it should sizzle.

Cooking

  • Drop spoonfuls of the zucchini mixture into the hot oil, flattening each slightly with the back of the spoon.
  • Fry until golden brown and crispy, about 3–4 minutes on each side. Adjust the heat as necessary to prevent burning.
  • Transfer the fritters to a plate lined with paper towels to drain excess oil. Serve warm.

Notes

Make sure to remove as much moisture from the zucchini as possible for crispiness. Fry a test fritter first to check seasoning and texture. Variations include adding herbs or spices for extra flavor.
