  • 2 lbs beef stew meat
  • 4 cups beef broth
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 2 tablespoons olive oil

Cooking

  • Heat olive oil in a large pot over medium heat.
  • Add the beef stew meat and brown it on all sides.
  • Remove the beef and set it aside.
  • In the same pot, add the diced onion and cook until it becomes translucent.
  • Stir in the minced garlic and cook for another minute.
  • Add the tomato paste, thyme, rosemary, salt, and pepper, mixing everything well.
  • Return the beef to the pot and add the beef broth.
  • Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  • Let it simmer for about 1.5 to 2 hours until the beef is tender.
  • Add the carrots and potatoes, cooking for an additional 30-40 minutes.
  • Adjust the seasoning if needed and serve hot.

Notes

To store leftover stew, let it cool down completely. Place it in an airtight container and keep it in the fridge for 3 to 4 days or freeze for up to 3 months. For extra flavor, sear the beef on high heat before adding other ingredients. Feel free to add other vegetables for variety. Mix cornstarch with cold water during the last minutes of cooking for a thicker stew.
