Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened Make sure your butter is softened for easier mixing.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins

  • 2 cups semi-sweet chocolate chips Feel free to use different types of chocolate chips for varied flavors.
  • 1/2 cup white chocolate chips Can substitute with butterscotch chips.
  • 1/2 cup crushed peppermint candies Experiment with adding more or less peppermint to suit your taste.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
  • Add the eggs one at a time and mix in the vanilla extract.
  • In another bowl, combine the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the semi-sweet chocolate chips, white chocolate chips, and crushed peppermint candies.

Shaping

  • Drop tablespoon-sized portions of cookie dough onto ungreased baking sheets.
  • Leave enough space between each cookie as they will spread while baking.

Baking

  • Bake in the preheated oven for about 10 to 12 minutes or until the edges are golden but the centers are still soft.

Cooling

  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve cookies warm with milk or hot cocoa. Display on a festive platter, with an extra sprinkle of crushed peppermint for added flair. To store, keep in an airtight container at room temperature for up to a week or freeze for longer storage.
