  • 2 large juicy oranges, segmented Segment over the bowl to catch juices
  • 1 cup vibrant pomegranate seeds
  • 1 cup crumbled feta cheese Can be swapped with goat cheese
  • 1/2 cup candied pecans Can substitute with walnuts or almonds

Dressing Ingredients

  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt Adjust to taste
  • 1/4 teaspoon pepper Adjust to taste

Preparation

  • In a large bowl, combine the spring greens, segmented oranges, pomegranate seeds, crumbled feta, and candied pecans.
  • In a small jar, mix together the olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve immediately as a festive side dish or light main course.

Notes

Keep components stored separately for best texture when not serving immediately. Offer extra dressing and crumbled feta on the side.
