  • 1 piece English cucumber (chopped) English cucumbers are preferred for better texture.
  • 6 oz feta cheese (cubed) Can substitute with goat cheese for a creamier texture.

For the Flavor

  • 1 handful chopped fresh mint leaves Fresh basil or parsley can be used as alternatives.
  • 1 piece fresh lime (zest and juice) Lemon juice can be used as a substitute if lime is unavailable.
  • to taste sea salt flakes Adjust seasoning based on preference.
  • to taste fresh ground black pepper

Preparation

  • Begin by cubing the watermelon and chopping the English cucumber. Cube the feta cheese.
  • In a large serving bowl, add the cubed watermelon, chopped cucumber, and cubed feta cheese.
  • Sprinkle the chopped mint leaves over the salad ingredients.
  • Zest the lime directly into the bowl, then cut the lime in half and squeeze the juice on top.
  • Sprinkle with sea salt flakes and fresh ground black pepper to enhance the flavors. Gently toss all ingredients until well combined.
  • Give your salad a taste and adjust the seasoning as needed.
  • Transfer the salad to individual plates or serve directly from the bowl.
  • It’s best served chilled, so consider refrigerating it for a short while before serving.

Notes

Choose ripe ingredients for the best flavor. Gently toss the salad to avoid breaking the feta cheese into crumbles. It's better fresh; the salad can be stored in the fridge for up to two days.
