  • 2 cups cucumber, diced

  • 1/4 cup red onion, thinly sliced Can be replaced with green onions or shallots.

For the Dressing

  • 2 tablespoons olive oil Avocado oil is a great alternative.

To Serve

  • 2 tablespoons fresh mint, chopped Can substitute with fresh basil or parsley.

Preparation

  • In a large bowl, combine the diced watermelon, cucumber, feta cheese, and red onion.
  • Drizzle with olive oil and sprinkle with salt and pepper to taste.
  • Gently toss the salad to combine all ingredients without mashing the watermelon or feta.
  • Garnish with the fresh mint, spreading it evenly over the top.
  • For best flavor, refrigerate for at least 30 minutes before serving.

Notes

Choose ripe watermelon and fresh herbs for best taste. Combine vegetables just before serving to maintain freshness.
