Ingredients
  

Vegetable Stir-Fry

  • 2 cups mixed vegetables e.g. broccoli, bell peppers, carrots
  • 1 cup firm tofu cubed
  • 2 tablespoons soy sauce or tamari
  • 1 cup cooked brown rice or noodles

Vegetarian Casserole

  • 1 cup cooked quinoa
  • 1 cup diced vegetables zucchini, spinach, onion
  • 0.5 cup grated cheese or vegan cheese optional
  • 1 cup plant-based sauce tomato or cashew-based

Lentil Soup / Vegetable Chili

  • 1 cup dried lentils or canned beans
  • 2 cups chopped vegetables e.g. carrots, celery, tomatoes
  • 3 cups vegetable broth

Instructions
 

  • For stir-fry: sauté vegetables and tofu in a skillet with soy sauce until tender. Serve over brown rice or noodles.
  • For casserole: mix cooked quinoa, veggies, sauce, and optional cheese in a baking dish. Bake at 180°C (350°F) for 25–30 minutes.
  • For soup or chili: simmer lentils or beans with chopped vegetables and broth for 25–30 minutes, until soft and flavorful. Store in containers for the week.

Notes

All these dinners can be stored for up to 5 days in the fridge. Soups and casseroles freeze well too. Customize the veggies based on the season.
