Ingredients
  

Overnight Oats

  • 1 cup rolled oats
  • 1 cup plant-based milk or yogurt
  • 0.5 cup mixed fruit fresh or frozen

Smoothie Packs

  • 2 cups mixed fruits and vegetables for freezing
  • 1 cup plant-based milk or water for blending

Egg Muffins or Tofu Scramble

  • 4 eggs or use 200g tofu for vegan option
  • 1 cup chopped vegetables like spinach, bell pepper, onion

Instructions
 

  • For overnight oats: Mix oats, milk/yogurt, and fruit in containers. Refrigerate overnight. Enjoy cold or warm in the morning.
  • For smoothie packs: Portion fruits and veggies into freezer bags. Blend with milk or water when ready to consume.
  • For egg muffins: Whisk eggs and mix with chopped veggies. Pour into a muffin tin and bake at 180°C (350°F) for 20-25 minutes. For tofu scramble: Crumble tofu, sauté with veggies and spices until cooked.

Notes

Customize your oats and smoothies with seeds, nuts, or protein powder. Egg muffins and scrambles can be made ahead and stored in the fridge for up to 4 days.
