  • 2 cups chopped vegetables (spinach, bell peppers, onions, etc.) Use a mix of your favorite vegetables.
  • 1 cup shredded cheese (optional) Enhances creaminess and flavor.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Chop vegetables into small, uniform pieces. Sauté in a pan with olive oil until tender.
  • In a large bowl, whisk together eggs and milk. Season with salt, pepper, and herbs.
  • Once the vegetables are sautéed, allow to cool slightly and mix with the egg mixture. Stir in cheese if using.

Baking

  • Pour the mixture into a greased baking dish and spread evenly.
  • Bake for 25-30 minutes, or until golden brown and a knife comes out clean.
  • Cool for a few minutes before slicing into squares and serve warm.

Notes

Can be prepared ahead of time and reheated. Customize with additional vegetables or proteins as desired.
