  • 2 lbs fresh green beans (trimmed)
  • 3 tablespoons unsalted butter
  • 16 oz crimini mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 2 cans Campbell’s cream of mushroom soup
  • 1 cup half and half
  • 1 tablespoon soy sauce
  • 2 teaspoons fresh thyme sprigs
  • 2 cups French's Crispy Fried Onions 1 can

Preparation

  • Preheat your oven to 350°F.
  • Bring a large stock pot of water to a rolling boil. Cook the green beans for 3-4 minutes, then transfer them into a large bowl filled with ice water to stop the cooking process. Once cooled, drain and set the beans aside.
  • In a large sauté pan, melt the butter over medium heat. Add the sliced mushrooms and cook for 5-10 minutes or until they are golden brown. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  • In a large bowl, mix together the cream of mushroom soup, half and half, soy sauce, and thyme sprigs.
  • Combine the soup mixture with the sautéed mushrooms, half of the crunchy fried onions, and the green beans. Transfer everything to a large casserole dish.

Baking

  • Cover with foil and bake for 20 minutes.
  • Remove the foil, sprinkle the remaining onions on top, and bake for an additional 5-10 minutes or until bubbly and golden brown.

Notes

Serve hot from the oven as a delicious side dish. Pairs well with roasted meats, turkey, or hearty vegetarian dishes. For extra flavor, consider adding a splash of white wine when sautéing the mushrooms. You can use frozen green beans if fresh ones are not available, but fresh will give a better texture. Feel free to mix in your favorite cheese for a cheesy twist. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
