Ingredients
  

For the Sandwich

  • 4 pieces croissants Butter for toasting can be added
  • 8 large eggs
  • 8 slices thick-cut bacon Cook until crispy
  • ½ cup guacamole
  • 4 slices pepper jack cheese Can substitute with other cheese
  • ½ cup garlic butter tomato sauce Can also use hot sauce
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cut the croissants in half and place them on a baking sheet, cut side down.
  • Toast in the oven for about 5 minutes until golden and crispy.

Cooking

  • In a skillet over medium heat, cook the bacon slices until they are crispy, about 5-7 minutes.
  • Remove the bacon and drain on paper towels to absorb excess grease.
  • In a bowl, crack the eggs and whisk them with a pinch of salt and pepper.
  • In the same skillet used for bacon, reduce the heat to medium-low and add a bit of butter if needed.
  • Pour in the eggs and gently stir with a spatula, allowing the eggs to form soft curds. Cook until just set but still creamy.

Assembly

  • On the bottom half of each croissant, spread a tablespoon of garlic butter tomato sauce.
  • Add a layer of scrambled eggs followed by a slice of cheese.
  • Top with two slices of crispy bacon and a generous dollop of guacamole.
  • Close the sandwich with the top half of the croissant.

Serving

  • Serve the sandwiches warm, accompanied by fresh fruit or a side salad for a balanced meal.

Notes

Breakfast sandwiches can be customized with different proteins, cheeses, and sauces. Wrap tightly in foil for storage and can be reheated as needed.
