Ingredients

  • 2 cups shredded chicken Use rotisserie chicken for convenience.
  • 1 cup diced cucumbers Ensure cucumbers are drained well.
  • ½ cup finely chopped red onion

For the Sauce

  • 1 cup Greek yogurt Substitute low-fat or non-fat Greek yogurt for a lighter version.
  • 2 cloves garlic, minced
  • 1 each Juice of 1 lemon
  • 2 tablespoons chopped fresh herbs (dill, parsley, or mint) Feel free to mix and match herbs.

To Serve

Preparation

  • In a bowl, mix Greek yogurt with minced garlic, lemon juice, and chopped herbs to create the tzatziki sauce.
  • In another bowl, combine shredded chicken, diced cucumbers, and finely chopped red onion until evenly mixed.
  • Pour the tzatziki sauce over the chicken mixture and stir until well combined.
  • Season with salt and pepper to taste, adjusting according to preference.
  • Serve chilled as a side dish or light meal. Garnish with more fresh herbs if desired.

Notes

Allow the salad to sit for 10-15 minutes for the flavors to meld before serving. For a refreshing kick, chill in the fridge for at least 30 minutes.
