Ingredients
  

For the Base

  • 2 cups rotisserie chicken, shredded

For the Sauce

  • 1 cup plain Greek yogurt Can be replaced with a dairy-free yogurt for a lactose-free version.
  • 1 cucumber, grated and excess moisture squeezed out Use grated zucchini if fresh cucumber isn't available.
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped fresh dill or mint (optional) Fresh herbs like parsley or basil can substitute for dill or mint.

To Serve

  • Mixed greens or lettuce for serving

Instructions
 

Make the Tzatziki Sauce

  • Combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper in a bowl. Stir until well mixed to create the tzatziki sauce.

Add Chicken

  • Add the shredded rotisserie chicken to the tzatziki sauce. Mix well until all the chicken is coated.

Add Fresh Herbs (Optional)

  • Fold in chopped fresh dill or mint for extra flavor.

Serve

  • Serve the tzatziki chicken salad over a bed of mixed greens or crisp lettuce.

Notes

Use cold ingredients for the best texture and flavor. Allow the salad to sit for about 15 minutes before serving to let flavors meld. Store in the refrigerator for up to 3 days. Freezing is not recommended.
