  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced

  • 2 tablespoons water
  • to taste sesame seeds for garnish
  • to taste green onions for garnish

Instructions

Preparation

  • In a bowl, mix together soy sauce, brown sugar, honey, garlic, and ginger to make the teriyaki sauce.
  • Place chicken thighs in a zip-top bag and pour the teriyaki sauce over them. Marinate for at least 30 minutes, or up to overnight.

Cooking

  • Preheat grill or skillet over medium heat.
  • Remove chicken from marinade and cook for 6-7 minutes on each side until cooked through.
  • In a small bowl, mix cornstarch and water to create a slurry; add to the remaining marinade in a saucepan.
  • Bring sauce to a boil, stirring constantly until thickened.
  • Serve chicken with thickened teriyaki sauce over rice, garnished with sesame seeds and green onions.

Notes

For the best flavor, let the chicken marinate longer. Overnight is ideal if you have time. Make sure to cook the chicken to an internal temperature of 165°F (75°C) to ensure it is safe to eat. If you prefer a spicier kick, add a pinch of red pepper flakes to the teriyaki sauce.
