Tender Crock Pot Beef and Broccoli

Ingredients
  

For the Base

  • 1 pound beef sirloin, thinly sliced Can substitute with flank steak or chicken.
  • 2 cups broccoli florets If using frozen, add during the last hour.

For the Sauce

  • 1 cup beef broth Low-sodium is a great option.
  • 1/2 cup soy sauce Tamari is a gluten-free alternative.
  • 1/4 cup brown sugar Can replace with honey or agave syrup.
  • 2 cloves garlic, minced Increase to 4 for a stronger flavor.

To Serve

  • 1 tablespoon cornstarch (optional, for thickening) Arrowroot powder can be used as an alternative.
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Preparation

  • In a bowl, combine the beef broth, soy sauce, brown sugar, and minced garlic. Mix well until the sugar is dissolved.

Cooking

  • Place the sliced beef in the crock pot and pour the sauce mixture over it, ensuring all the beef is well coated.
  • Set the crock pot to low and cook for 6-8 hours or on high for 3-4 hours until the beef is fork-tender.
  • About 30 minutes before serving, add the broccoli florets to the crock pot and stir to combine.
  • If desired, mix cornstarch with a bit of water and add to the sauce to thicken. Stir well and allow it to cook for the last 10 minutes.

Serving

  • Serve the beef and broccoli over rice or noodles of your choice. Garnish with sesame seeds or chopped green onions if desired.

Notes

Try serving with a sprinkle of sesame seeds for added crunch and flavor. Adjust seasoning with additional soy sauce or brown sugar as desired.
