Ingredients
  

For the Tater Tot Base

  • 4 cups frozen tater tots Crispy and golden for the best texture.

For the Sausage Gravy

  • 1 pound beef sausage Cooked until no longer pink.
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk To thicken the gravy.
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

For the Toppings

  • 4 large eggs Fried or scrambled.
  • 1/2 cup shredded cheddar cheese For garnish.
  • 2 pieces green onions Sliced for topping.
  • 1/4 teaspoon red pepper flakes Optional, for heat.

Instructions
 

Bake the Tater Tots

  • Preheat your oven according to the package instructions for the tater tots.
  • Spread them out on a baking sheet and bake until crispy and golden brown.
  • For extra crunch, broil them for the last 2-3 minutes.

Make the Sausage Gravy

  • In a large skillet over medium heat, cook the beef sausage, breaking it up as it browns until completely cooked.
  • Reduce heat to low, stir in butter until melted, then sprinkle flour over the sausage and stir to coat.
  • Let cook for 1-2 minutes, then slowly pour in milk while stirring constantly to prevent lumps.
  • Continue stirring as the gravy thickens, then season with salt, pepper, and garlic powder.
  • Remove from heat once thick and creamy.

Cook the Eggs

  • In a separate pan, cook your eggs to preference, fried or scrambled.

Assemble the Bowls

  • Divide the crispy tater tots between serving bowls.
  • Spoon sausage gravy generously over each bowl.
  • Add a cooked egg to each bowl, then sprinkle with cheese and green onions.
  • Add red pepper flakes if desired.
