Ingredients
  

For the Base

  • 4 medium sweet potatoes (about 12-14 ounces each)

For the Filling

  • 1 pound lean ground beef Can substitute with ground turkey or chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning Homemade seasoning can be used
  • 1 cup chunky salsa Select based on spice preference
  • 1/4-1/2 cup water To adjust the filling's consistency

To Serve

  • shredded Mexican blend cheese Can opt for dairy-free version
  • diced tomato
  • diced avocado or guacamole
  • sour cream

Preparation

  • Poke holes all over each sweet potato with a fork. Place them in the microwave and cook on high for 8-10 minutes, turning them halfway through for even cooking.

Cooking the Filling

  • In a large skillet over medium-high heat, brown the ground beef with chopped onion and minced garlic until the meat is fully cooked. Drain any grease.
  • Add the taco seasoning and chunky salsa to the skillet with the browned meat. Reduce heat to medium-low and let it cook for about 5 minutes until the mixture thickens.

Assembly

  • Once the sweet potatoes are cool enough to handle, slice each lengthwise and fluff the insides with a fork. Spoon the taco filling generously over each sweet potato.
  • Top the taco stuffed sweet potatoes with shredded Mexican blend cheese, diced tomatoes, avocado or guacamole, and a dollop of sour cream. Enjoy your meal!

Notes

Consider using flavored salsa for an extra kick. For a gourmet touch, add feta cheese on top. Sweet potatoes can be baked in advance; just reheat them before serving.
