Ingredients
  

For the Base

  • 1 lb ground beef Can be substituted with ground turkey or chicken for a leaner option.
  • 1 packet taco seasoning Homemade taco seasoning can be used for better control over spice level.
  • 6-8 pieces corn tortillas Flour tortillas can be used, but will change the texture.

For the Filling

  • 2 cups shredded cheese (cheddar or Mexican blend) Opt for reduced-fat cheese for a healthier option.
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned) Make sure to drain if using canned corn.
  • 1 cup salsa

To Serve

  • sour cream, avocado, green onions, cilantro (optional) Optional toppings for serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) to prepare for baking.
  • In a skillet over medium heat, cook the ground beef until browned; drain excess fat.
  • Stir in the taco seasoning and mix well to evenly coat the meat.

Layering

  • In a baking dish, layer half of the tortillas, followed by half of the beef mixture, black beans, corn, salsa, and cheese.
  • Repeat the layers with the remaining ingredients.

Baking

  • Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it sit for a few minutes before serving. Add your favorite toppings and enjoy!

Notes

For a crispier texture, bake uncovered for the last 5 minutes. Use fresh herbs for garnish and consider drizzling with lime juice for added freshness.
