For the Casserole

  • 3 cups sweet potatoes (mashed)
  • 1/2 cup sugar
  • 1/3 cup milk Use half-and-half for a creamier texture.
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup pecans (chopped) Toast for a crunchier texture.
  • 1 cup mini marshmallows
  • 2 tablespoons butter (melted)

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the mashed sweet potatoes, sugar, milk, vanilla extract, and salt until well combined.
  • Spread the sweet potato mixture in a greased baking dish.
  • In another bowl, combine the chopped pecans with the melted butter and mix well.
  • Sprinkle the pecan mixture over the sweet potatoes.
  • Top with mini marshmallows.
  • Bake in the preheated oven for about 25-30 minutes or until the marshmallows are golden brown.
  • Let it cool slightly before serving.

Notes

Serve warm with roasted turkey or ham, or enjoy as a dessert. A dollop of whipped cream can add extra sweetness.
