Main Ingredients

  • 4 cups sweet potatoes (fresh or canned) If using fresh, peel and boil until tender.
  • 1/2 cup brown sugar
  • 1/3 cup milk
  • 1/4 cup butter (melted)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups mini marshmallows Use as topping.

Preparation

  • Preheat your oven to 350°F (175°C).
  • If using fresh sweet potatoes, peel and boil until tender, then mash them. If using canned, drain and mash.
  • In a large bowl, mix the mashed sweet potatoes with brown sugar, milk, melted butter, vanilla extract, and salt until smooth.
  • Transfer the mixture to a greased baking dish.
  • Top with mini marshmallows evenly.

Baking

  • Bake in the preheated oven for about 30 minutes, or until the marshmallows are golden brown.

Notes

Serve warm and consider drizzling with maple syrup. Can be made ahead of time and stored in the refrigerator.
