  • 2 cups mashed sweet potatoes Freshly cooked
  • 1/2 cup brown sugar
  • 1/4 cup milk Any kind of milk can be used
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup mini marshmallows

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, vanilla extract, cinnamon, and nutmeg. Mix until well blended.
  • Transfer the sweet potato mixture to a greased baking dish.

Baking

  • Bake in the preheated oven for 25 minutes.
  • Remove from the oven and top with mini marshmallows.
  • Return to the oven and bake for an additional 10 minutes, or until the marshmallows are golden brown.

Serving

  • Serve warm as a side dish.

Notes

For extra flavor, you can add chopped pecans or walnuts on top of the casserole before baking. If you like a smoother texture, use a hand mixer to blend the sweet potato mixture. You can also make a savory version by omitting the marshmallows and sugar, and adding cheese or herbs.
