  • 1 lb Chicken thighs Can substitute with chicken breasts, tofu, or shrimp.
  • 2 cups Rice White rice, brown rice, or quinoa can be used.
  • 1/2 cup Sweet chili sauce Adjust sweetness to taste.
  • 2 tbsp Soy sauce Use vegetable broth for a vegan option.
  • 2 cloves Garlic Minced.
  • 1 tbsp Ginger Grated.
  • 2 cups Mixed vegetables Bell peppers, broccoli, snap peas, carrots, or zucchini.
  • 1/4 cup Green onions Chopped, for garnish.
  • 2 tbsp Sesame seeds For garnish.

Instructions
 

Preparation

  • Cook rice according to package instructions.
  • In a bowl, mix sweet chili sauce, soy sauce, minced garlic, and grated ginger.
  • Marinate chicken thighs in the sauce mixture for at least 30 minutes.

Cooking

  • In a skillet, cook chicken thighs over medium heat until fully cooked and caramelized.
  • Add vegetables to the skillet and stir-fry until tender.

Assembling

  • Assemble bowls with rice, topped with chicken and vegetables.
  • Garnish with chopped green onions and sesame seeds. Serve hot.

Notes

For leftovers, store in an airtight container in the refrigerator for up to 3 days. Add a sprinkle of water when reheating the rice to prevent dryness.
