Ingredients
  

For the Skewers

  • 24 cubes watermelon cubes (cut into 1-inch squares) Use ripe watermelon for the best flavor.
  • 9 oz firm feta (cubed into 1-inch squares) Use firm feta to hold its shape.
  • 2 large cucumbers (thinly sliced into ribbons) Use a mandoline for even ribbons.
  • 5 oz prosciutto (torn into thin ribbons) For a vegetarian option, substitute with grilled halloumi or olives.
  • 24 leaves fresh basil leaves Adding mint leaves can enhance freshness.

To Serve

  • 12 skewers skewers Wooden or metal skewers work well.
  • 3 tbsp balsamic glaze Drizzle generously over skewers.
  • 1/2 tsp kosher salt Enhances overall flavor.
  • 1/4 tsp freshly cracked black pepper For a mild spicy kick.

Preparation

  • Cut the watermelon and feta into 1-inch cubes if not already done. Slice the cucumbers into thin ribbons using a mandoline, then tear the prosciutto into thin, pliable ribbons. Gather the fresh basil leaves and prepare all components on your work surface.

Assembly

  • Working with one skewer at a time, thread the components in this order: watermelon cube, folded basil leaf, prosciutto, feta cube, cucumber ribbon. Repeat until the skewer is full, ending with a watermelon cube.

Serving

  • Arrange the assembled skewers on a serving plate. Drizzle the balsamic glaze over the skewers, allowing it to pool slightly on the plate. Finish with a sprinkle of salt and pepper to enhance the flavors.

Notes

Skewers can be prepared a few hours ahead but should be assembled right before serving for freshness. Store any leftovers in the refrigerator for up to 2 days.
