Ingredients
  

For the Chicken

  • 2 pieces chicken breasts Aim for about 1 inch thick for even cooking.
  • Salt and pepper to taste
  • tablespoons Olive oil for cooking For searing the chicken.

For the Filling

  • 1 cup roasted red peppers, chopped Use fresh bell peppers if preferred.
  • 1 cup fresh spinach, sautéed Frozen spinach works as a great alternative; thaw and drain well.
  • 1 cup mozzarella cheese, shredded Substitute with provolone or gouda for different flavors.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Carefully slice a pocket into each chicken breast without cutting all the way through.
  • In a bowl, combine the roasted red peppers, sautéed spinach, and mozzarella cheese. Mix well until all ingredients are incorporated.
  • Stuff the mixture into the pockets of the chicken breasts with a spoon or your hands.
  • Season the outside of the chicken breasts with salt and pepper.

Cooking

  • Heat olive oil in an oven-safe skillet over medium heat and sear the chicken breasts for about 4-5 minutes on each side until golden brown.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through, and the juices run clear.
  • Remove from the oven and let the chicken rest for a few minutes before slicing.

Notes

A drizzle of balsamic glaze adds a wonderful finishing touch. Always taste and adjust your seasoning for the filling before stuffing the chicken. Let the stuffed chicken rest before slicing to keep the filling from spilling out.
