  • 1 cup corn (fresh or canned) Frozen corn can also be used.
  • 1/2 cup diced red onion
  • 1 unit avocado, diced Keep separate until serving to prevent browning.
  • 1/2 cup chopped cilantro Can be replaced with parsley if desired.
  • 1 unit lime, juiced
  • Salt and pepper to taste

Optional Toppings

  • cheese Shredded cheese of your choice.
  • hot sauce For additional heat.
  • sour cream For creaminess.

Preparation

  • In a large bowl, combine the cooked rice, shredded chicken, corn, and red onion.
  • Squeeze lime juice over the mixture and season with salt and pepper.
