  • 1 pound Fresh Strawberries Use ripe strawberries for the best flavor.
  • cup Sugar Adjust amount to taste if strawberries are very sweet or tart.
  • 2 teaspoons Lemon Juice Adds freshness and balances the sweetness.
  • 1 teaspoon Cornstarch Helps to thicken the sauce.

Preparation

  • Wash and cut the strawberries into small pieces.

Cooking

  • In a medium pot, mix the cut strawberries, 1 tablespoon of lemon juice, and ⅓ cup of sugar.
  • Place the pot over medium heat and bring the mixture to a boil, stirring regularly.
  • Once boiling, reduce the heat to a simmer. Whisk the sauce occasionally and cook until it thickens, about 20–23 minutes.
  • Turn off the heat and let the sauce cool to room temperature. Remember that it will thicken further as it cools and more in the fridge.

Notes

Serve over pancakes, waffles, yogurt, or ice cream. Store in the refrigerator for up to a week or freeze for up to three months. Thaw overnight in the fridge before use. For a smooth sauce, blend it with a hand mixer after cooking. To enhance flavor, add a splash of vanilla extract.
