Casserole Ingredients

  • 4 cups sweet potatoes, peeled and cubed Use fresh sweet potatoes for the best flavor and texture
  • 1/2 cup maple syrup Adjust sweetness as desired
  • 1/4 cup brown sugar Adjust sweetness as desired
  • 1 cup raisins
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup mini marshmallows Use vegan marshmallows if making vegan
  • 1 cup pecans, chopped For additional crunch, add more on top before baking
  • 1/4 cup melted vegan butter Can substitute with regular butter
  • Salt to taste

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Boil the cubed sweet potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  • In a large bowl, mash the sweet potatoes, then mix in the maple syrup, brown sugar, raisins, cinnamon, nutmeg, and salt.
  • Spread the mixture in a greased casserole dish.
  • Top with mini marshmallows and the chopped pecans mixed with melted vegan butter.

Baking

  • Bake for 30-35 minutes until the top is golden and the marshmallows are toasted.
  • Let cool slightly before serving.

Notes

Serve warm as a side dish. Pairs well with roasted meats and festive main courses. For a special touch, add a scoop of vanilla ice cream on top.
