Ingredients
  

For the Base

  • 1 pound smoked sausage Can be substituted with turkey or chicken sausage.
  • 4 medium potatoes, diced Yukon gold or red potatoes can be used.
  • 1 medium onion, chopped Shallots can be used for a milder taste.

For the Seasoning

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

To Serve

  • Fresh parsley for garnish (optional)

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large baking dish, combine the diced potatoes, chopped onion, and sliced smoked sausage.
  • Drizzle the mixture with olive oil, then sprinkle garlic powder, paprika, salt, and pepper over the top.
  • Toss all the ingredients together until well coated with oil and seasonings.

Baking

  • Place the baking dish in the preheated oven and bake for 25-30 minutes, stirring halfway through.
  • Check for doneness; the dish is ready when the potatoes are tender and golden brown.
  • Let it cool slightly before serving. Garnish with fresh parsley if desired.

Notes

You can make ahead by dicing the potatoes and chopping the onions a day in advance. Leftovers can be stored in the refrigerator for up to 3 days. Freezing is not recommended due to texture changes.
