  • 1 lb Baby potatoes Can substitute with fingerlings or Yukon golds
  • to taste tsp Salt Adjust based on preference
  • to taste tsp Pepper Adjust based on preference

For the Sauce

  • 2 cloves Garlic Minced, fresh adds great flavor
  • 1/4 cup Herb butter Can substitute with olive oil or vegan alternative

To Serve

Instructions
 

Preparation

  • Boil the baby potatoes in salted water until tender, about 15-20 minutes.
  • Drain the boiled potatoes and let them cool slightly.
  • Preheat your oven to 425°F (220°C).

Cooking

  • Place the cooled potatoes on a baking sheet and gently smash each one with a fork.
  • Mix the minced garlic and herb butter together in a small bowl.
  • Brush the smashed potatoes with the garlic herb butter and season with salt and pepper.
  • Roast in the preheated oven for 15-20 minutes until crispy and golden brown.
  • Remove from the oven and serve hot, garnished with fresh herbs if desired.

Notes

For extra crispiness, let the smashed potatoes sit for a few minutes before baking. Don't overcrowd the baking sheet to ensure even cooking.
