  • 1.5 lbs beef stew meat
  • 2 cups baby potatoes, halved You can substitute with sweet potatoes for a sweeter taste.

Garlic Butter Mixture

  • 1/2 cup unsalted butter Melted
  • 4 cloves garlic, minced Cook until fragrant.
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon Worcestershire sauce Optional: marinate beef for extra flavor.

Preparation

  • In a slow cooker, combine the beef stew meat and halved potatoes.
  • In a small saucepan, melt the butter over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  • Stir in the beef broth, salt, pepper, thyme, rosemary, and Worcestershire sauce.
  • Pour the garlic butter mixture over the beef and potatoes in the slow cooker.

Cooking

  • Cover and cook on low for 6-8 hours or high for 4 hours, until the beef is tender and the potatoes are cooked through.

Serving

  • Serve hot, optionally with a sprinkle of fresh herbs like parsley, and enjoy with a side salad or crusty bread.

Notes

If you have leftovers, let them cool completely. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
