Main Ingredients

  • 1 lb ground beef Can substitute with ground turkey or chicken for a lighter option.
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning Ensure gluten-free if needed.
  • 2 cups shredded cheese Use your favorite type of cheese.
  • 1 cup diced bell peppers Feel free to add other vegetables like zucchini or mushrooms.
  • 1 cup diced onions Frozen onions work fine.
  • to taste Salt and pepper

Instructions
 

Preparation

  • Brown the ground beef in a skillet over medium heat, then drain.
  • In the slow cooker, combine the cooked beef, kidney beans, black beans, corn, diced tomatoes, and taco seasoning.
  • Stir in the diced peppers and onions.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, stir in shredded cheese and let it melt.
  • Season with salt and pepper to taste before serving.

Notes

Serve warm with additional toppings like cheese, sour cream, or cilantro. Great with salad or cornbread on the side. Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for longer storage.
