Ingredients
  

For the Base

  • 1.5 pounds boneless, skinless chicken breasts or thighs, cut into chunks Chicken thighs can add more flavor.
  • 1 medium onion, diced
  • 3 medium carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 1 cup frozen peas Fresh peas can be substituted if available.

For the Sauce

  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream or half-and-half Half-and-half cuts down on calories.
  • 1/3 cup all-purpose flour Use gluten-free flour for a gluten-free option.
  • 1 teaspoon dried thyme Fresh herbs like rosemary can be added for flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper A dash of freshly cracked black pepper can brighten the dish.
  • 1/4 teaspoon smoked paprika (optional)

To Serve

  • 1 tube refrigerated biscuits or puff pastry, cut into squares You can swap with homemade pastry.
  • 1 tablespoon butter, melted (for brushing)
  • 1 tablespoon fresh parsley, chopped, for garnish Optional.

Preparation

  • Start by cutting the chicken into chunks and dicing the onion. Slice the carrots and celery. Mince the garlic. Have your frozen peas ready.

Assemble the Slow Cooker

  • In your slow cooker, add the chicken, diced onion, carrots, celery, and frozen peas. Mix them gently to combine.

Thicken the Sauce

  • In a medium bowl, whisk together the chicken broth, heavy cream, flour, thyme, salt, black pepper, and smoked paprika (if using). Pour this mixture over the chicken and vegetables in the slow cooker. Stir gently to combine.

Prepare the Topping

  • About 30 minutes before serving, take the refrigerated biscuits or puff pastry and cut them into squares. Place them on top of the chicken mixture in the slow cooker. Brush with melted butter for a nice golden finish.

Cook and Serve

  • Cover the slow cooker and cook on low for about 6-7 hours or high for 3-4 hours, until the chicken is tender and fully cooked. Serve hot, garnished with fresh parsley if desired.

Notes

Timing is key. Stirring too frequently can increase cooking time. Check doneness by ensuring chicken reaches 165°F (74°C). Adjust seasoning to your taste.
