For the Cookie Dough

  • 2 Tablespoons unsalted butter, softened Ensure butter is softened to avoid lumps in the dough.
  • 4 Tablespoons brown sugar
  • 1 each egg yolk Using just the yolk ensures a chewy texture.
  • 1/4 teaspoon vanilla extract
  • 1 1/2 Tablespoons Dutch processed cocoa powder Regular cocoa powder can be used as a substitute.
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 4 Tablespoons all purpose flour
  • 3 Tablespoons semisweet chocolate chips For an even richer flavor, dark chocolate chips can be used.

Preparation

  • Preheat the oven to 350°F and line a baking sheet with parchment paper. Set it aside.
  • In a medium bowl, mix the softened butter and brown sugar until smooth and homogenous using a fork or a whisk.
  • Add the egg yolk and vanilla extract to the mixture and mix until combined.
  • Add the cocoa powder, flour, baking soda, and salt, and mix until just combined with no streaks of flour.
  • Fold in the chocolate chips until they are evenly distributed.
  • Divide the cookie dough into 2 large cookies and place them on the prepared baking sheet, 2 inches apart.

Baking

  • Bake at 350°F for 11 minutes or until the edges are set but the centers are still gooey.
  • Allow to cool for 10 minutes on the baking sheet until set.

Notes

These cookies can be served plain or with a scoop of vanilla ice cream for an extra treat. They are perfect for an afternoon snack or late-night dessert. Store any leftovers in an airtight container at room temperature for up to two days.
