  • 1/4 cup cherry tomatoes, halved

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Preparation

  • In a large bowl, combine the drained tuna and garbanzo beans.
  • Add the chopped red onion, diced bell pepper, and halved cherry tomatoes.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss to combine.
  • Adjust seasoning if necessary and garnish with fresh parsley if desired.
  • Serve immediately or chill in the refrigerator before serving.

Notes
