Ingredients
  

For the Cake Base

  • 1/2 cup milk (room temperature, about 70°F)
  • 1/2 cup sour cream (full-fat) Greek yogurt can be used as a healthier substitute.
  • 3 large egg whites
  • 3 tbsp lemon juice Freshly squeezed.
  • 1 tbsp lemon zest
  • 1.5 tbsp vanilla essence
  • 1/4 tsp almond extract
  • 2 cups flour Feel free to use a gluten-free flour blend if needed.
  • 1.67 cups sugar
  • 1.75 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup butter (softened) A combination of butter and applesauce can be used for a lighter option.

For the Blueberry Sauce

  • 1.33 cups blueberries (fresh or frozen)
  • 1/2 cup blueberries (frozen)
  • 1.5 tbsp sugar
  • 1 tbsp lemon juice Freshly squeezed.
  • 1 tbsp water

For the Frosting

  • 1.5 cups butter (unsalted)
  • 1/2 tsp salt
  • 6 cups icing sugar (sifted)
  • 4 tbsp lemon juice (freshly squeezed)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease three 6-inch round cake pans well to prevent sticking.
  • In a large mixing bowl, whisk together the milk, sour cream, egg whites, lemon juice, lemon zest, vanilla essence, and almond extract until smooth.

Making the Blueberry Sauce

  • In a saucepan, combine the blueberries, sugar, lemon juice, and water. Simmer until the berries burst and the mixture reduces by half, then let it cool completely.

Combining Ingredients

  • In another bowl, mix flour, sugar, baking powder, and salt. Gradually add softened butter until it resembles coarse crumbs.
  • Gently pour the wet mixture into the dry ingredients and mix until just combined. Fold in fresh blueberries.

Baking

  • Divide the batter evenly among the prepared pans and bake for 30 minutes or until a toothpick comes out clean.
  • Let the cakes cool in the pans for 15 minutes, then transfer them to a wire rack to cool completely.

Frosting and Assembly

  • Beat the unsalted butter until fluffy, then gradually add sifted icing sugar and lemon juice. Reserve some frosting for decoration.
  • Layer the cake with reserved frosting and blueberry sauce, then smooth the remaining frosting around the outer edge.

Chilling

  • Chill the assembled cake for about 20 minutes before serving to set the frosting.

Notes

Ensure all ingredients are at room temperature for better mixing. Don't overmix the batter.
