For the Base

  • 6 dates (pitted and soaked in warm water for 2 minutes to soften) Soaking helps in blending.
  • 1 cup dried apricots Can substitute with dried peaches or figs.
  • 2.5 tbsp chia seeds
  • 1/3 cup cashew halves Substitute with almonds or walnuts if desired.
  • 2 tbsp coconut oil (melted) Can be replaced with almond butter or peanut butter.
  • 1/8 tsp sea salt
  • 1/4 tsp ground cinnamon

Preparation

  • Soak the pitted dates in warm water for 2 minutes to soften them.
  • Melt the coconut oil in the microwave for about 1 minute until fully liquid, ensuring it does not boil.
  • Drain the soaked dates well. In a food processor, combine the softened dates, dried apricots, cashew halves, melted coconut oil, chia seeds, sea salt, and ground cinnamon. Blend for 20-30 seconds until it holds together yet retains some texture.
  • Roll the mixture into 1-inch balls and place them on a baking sheet or plate.
  • If the mixture is too sticky, chill in the refrigerator for 10-15 minutes, then refrigerate the formed balls for at least 30 minutes to firm up.

Notes

These energy balls can be made ahead and will last for about a week in an airtight container in the fridge. They can be frozen for up to 3 months, using parchment paper to layer between them for storage.
