Preparation

  • Cook the orzo according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side.
  • Pour in the chicken stock, lemon juice, and lemon zest, stirring to combine. Allow the flavors to meld for a minute.
  • Add the cooked orzo to the skillet and toss everything together until well mixed.
